Sustainable Gastronomy: Earth Day Eats

 

April 22nd marks the 54th anniversary of Earth Day nationwide and while we all have plenty to think about, this holiday encourages us to pause and consider our one and only planet. We all must play our part and Jeff Miller, of Rosella and Bar Miller, has created sushi menus that consciously reduce their carbon footprint as much as possible by sourcing local ingredients from the East coast and mindfully choosing to serve only sustainably caught fish. He doesn’t stop there; the restaurants adopt an intentional and holistic way of thinking that reduces waste.
