A Taste of Bordeaux

Like a winegrower, Chef Nicolas Masse of Les Sources de Caudalie composes his dishes like assembling a Grand Cru.

LA GRAND’VIGNE**

It's in the heart of the Graves vineyards, on the parcels of Château Smith Haut Lafitte vines, that Chef Nicolas Masse draws his inspiration for the gastronomic restaurant, La Grand’Vigne**, at Les Sources de Caudalie. Like a winegrower, Chef Nicolas Masse composes his dishes like assembling a Grand Cru. Together with Aurélien Farrouil, the Head Sommelier, they create menus that reflect a journey through this Land of Vines, aka “Terres de Vignes”.

“Sublimate with a deep respect for the essence of the product, Without transforming it.”

From the Maison's organic vegetable garden to Aquitaine's finest craftsmen, only the best is kept, the essential, to reveal the very essence of this unique wine-growing terroir. Much more than a food and wine pairing, Terre de Vignes is the expression of a territory's soul. A vibrant blend in which nature's purity is never compromised. Chef Nicolas Masse's guiding principle is pure and refined. The plate focuses on highlighting the fruits and vegetables of our organic vegetable garden, meat, dairy and fish products from our own farms or artisanal production in Aquitaine. The experience would not be complete without wine, the fetish fruit of the land. The dishes thus sublimate the sumptuous range of wines from Pessac Léognan and elsewhere, presented by the Head Sommelier Aurélien Farrouil.

The newly redecorated room has been completely painted in a deep carbon color to create an enveloping box. Decorative elements, lighting and tableware are available in pure, mineral shades, to finally focus attention on the plate and the products that come on stage.

LA TABLE DU LAVOIR

Welcome to this friendly and lively place which, from the moment you enter, lunges you into the atmosphere of the country inns we love. On the plate, tasty and generous dishes, seasonal products, old-fashioned vegetables that our chef likes to cook. Great classics of family cooking with a twist of discovery. This old framework, built in the 19th century, was previously used as a wash house by the winegrowers’ wives on laundry days. It has been re-built, from Château Smith Haut Lafitte, stone by stone. Its roof beams are recovered from the 18th century cellars of Château Lafite-Rothschild. During the warmest days, the large glass doors offer direct access to the beautiful sunny terrace, overlooking the endless Bordeaux vineyards.  During the coldest days, the fireplace serves to heat the room and to roast the delicious-smelling meats.

ROUGE

Their gourmet grocery shop - wine bar, Rouge, is a place to live, share and enjoy and to make the most of good times with family and friends. Enjoy a famous café croissant a little late, taste a glass of Bordeaux wine at the counter, and have lunch or dinner on the terrace in fine weather.
