Tim Stanhope
Tim Stanhope is the General Manager of Emirates One&Only Wolgan Valley, responsible for the overall resort operation and strategic development, as well as leading the resort team in its mission to create unrivaled guest experiences.
With a career in luxury hospitality spanning more than 30 years, Tim has worked in corporate roles in Food & Beverage with Emaar, IHG and Shangri-La, prior to moving into General Management. An ex-professional cricketer originally from New Zealand, Tim began his career in hospitality as a chef and has a wealth of experience in Food & Beverage across multiple regions including Asia, the Middle East and Europe. Prior to joining Emirates One&Only Wolgan Valley, he was General Manager of the Address Montgomerie, a 5-star resort in Dubai.
A true foodie, Tim’s passion is creating extraordinary experiences for guests at Emirates One&Only Wolgan Valley. “I wore a chef’s hat for over twenty years, and that obsession with delivering food and wine that blows guests away never leaves you”. Tim is excited to be in Wolgan Valley, surrounded by some of Australia’s best produce, working with star chef Jerome Tremoulet. His vision is for Emirates One&Only Wolgan Valley to be a culinary must-visit for locals and international travelers alike.

Do you have any secret spots around the hotel? What makes them special?
The resort’s location is truly unique. It’s nestled in a private valley and protected by soaring bush escarpments. Every one of our private villas have unparalleled views of the breathtaking surroundings.
What are you most excited about with the newly opened Australian borders?
We can’t wait to welcome back our international visitors once again and remind them what’s truly special about Australia.
Where is the postcard shot on property?
The resort is nestled in a private valley and protected by soaring bus escarpments, so really anywhere within the 7,000 between the two national parks you’re guaranteed to find a great spot.
What’s your favorite activity on property?
Definitely our wealth of conservation activities. Guests can become involved in the Resort’s initiatives through our scheduled Conservation Experience, giving them the opportunity to make a hands on contribution to the restoration
and protection of the reserve.

What new things can we expect from the hotel in 2022?
Our recent partnership with Australian culinary stars, The Bentley Group is a wonderful new addition to the Resort experience. We are excited to have collective talents of Brent Savage, Nick Hildebrandt and their Team join forces with Emirates One&Only Wolgan Valley to introduce our guests to a new gastronomic experience here at the resort. One of Australia’s most respected and influential chefs, Brent has a reputation for exciting, cutting-edge food, clever technique and a unique mastery of flavor and texture. Nick Hildebrandt is arguably Australia’s most influential sommelier and one of the country’s leading restaurateurs.
