Chef Miguel grew up in Jacksonville, Florida, where he began his career working in fine dining restaurants, one of which, in his early career, was nominated for a James Beard Award. He then left to work in Michelin Star restaurants across the world to gain experience and knowledge.
Today, Miguel is known to be one of the most influential chefs in his area. His base is primarily Killington but travels often for his clients and aims to serve high-quality dishes and memories for his guests. Outside of Killington, their team also serves mountain towns surrounding Okemo, Mt. Snow, Stratton, and other areas.
His work brings together “his Puerto Rican heritage, French culinary training, and interests in Nordic cuisine” and strives for perfection with each dish.

Owner Alan Kokish opened Aspen Chef back in 2006 to serve Aspen, Snowmass, and the Roaring Fork Valley. Serving everything from casual family-style buffets, to 10-course pairing menus with full rentals and staff, Alan and his team are equipped to tackle a range of jobs and excel in the quality of both food and service.
Alan moved to the Aspen area with the goal of skiing but ended up cooking in Aspen institutions like Cooper Street Pier and Luci’s. He then worked under well-known chef Joseph Rasacci. After a number of years working closely with Italian cuisine, then challenging himself by accepting the sous chef position at Nobu Matsuhisa, and finally opened Aspen Chef a few years later.
